Homemade Vanilla Icing by Brady

Icing

Ingredients
3\4 bag of 10* sugar
1\2 to 1 cup milk
(Depends how creamy)
2 tsp vanilla
Food coloring
(Your choice)
1 cup shortening








Directions


Step 1: Beat sugar, shortening, vanilla, and ½ cup milk in a bowl with a mixer.
Step 2: Add small amounts of milk and continue beating to desired creaminess.
Step 3:Add food coloring (your choice) and mix well.
Step 4: Spread icing on the cupcakes and enjoy!

Vanilla Cupcakes with Chocolate Icing by Grace

Vanilla Cupcakes with Chocolate Icing  

Ingredients for chocolate icing:
1 cup butter
¾ tbs milk
1 tsp vanilla extract
4 or 5 cups powdered sugar( depending on how sweet you want it.)
½ cups cocoa powder
Ingredients for vanilla cupcakes:
¾ cup butter
¾  cups of sugar
1 eggs, 1 egg white
1 ¼  cups flour
1 ½ tsp baking powder  
¼ tsp salt
½  cup milk
1 tsp vanilla

Steps:

Here are the steps to make the vanilla cupcakes: First you have to preheat the oven to 350 degrees.
1.Then, you have to mix the flour, baking powder, and salt, mix completely.
2. In a big bowl hand mix sugar and butter until fluffy.
3. Add in eggs one at a time.
4.Then, you have to beat in vanilla.
5.Next, you have to add the flour mixture into the big bowl.
6. Then, you have to add the milk, mix well.
7.Next, you have to put the batter into tins.
8.Let the cupcakes cook for 18 to 20 minutes.
9.Then, you have to let them cool for about 10 minutes.
10. This recipe makes 12 cupcakes.
Here are the steps for the chocolate icing:
1.First, mix the cocoa powder and butter together until smooth.
2.Finally, add the milk, powdered sugar, and vanilla in the same bowl, mix really well.  This might take a couple of minutes

Ultimate Chocolate Cupcakes

How To Make Homemade Ultimate Chocolate cupcakes!!!!!

*DO NOT TRY THIS IF YOU ARE A BEGINNER*

*MAKES 14 A BATCH*

*Be safe when you bake these cupcakes especially while using oven*
Prep time: 1 hour- 1 hour, 30 minutes

STEP #1- Gather the ingredients listed below

Batter Ingredients

- 1 cup of bread flour
- a cup of hot coffee
- ⅓ cup of Dutch-processed cocoa
-3 ounces of bittersweet chocolate, chopped fine
- 1 cup of granulated sugar
-2 large eggs
-tsp of table salt
-tsp baking soda
-6 tablespoons vegetable oil
-2 tsp white vinegar -1 tsp of vanilla extract



GANACHE FILLING
-2 oz. of bittersweet chocolate, chopped fine
- ¼ cup heavy cream
-1 tablespoon confectioners sugar

ICING INGREDIENTS  -½ lb of unsalted butter -1 ½ lb of confectioners sugar -½ cup of cocoa powder  -2 tsp of vanilla extract

DECORATING INGREDIENTS
- Piped chocolate shapes (melted chocolate in a piping bag)
                  -Sprinkles of your choice (I used pink)

STEP #2 Make your Ganache Filling
Place chocolate, heavy cream, and confectioners sugar in a medium bowl. Heat in microwave until warm to the touch, about 25 seconds. Whisk until smooth then, put bowl in the fridge and let it stand until chilled, about 30 minutes and no longer!

STEP #3 Preheat your oven to 350 degrees and adjust middle oven rack.

STEP #4 Get your liners and standard muffin pan (you will need the 12 muffin pan and a 6 muffin pan also) Put the liners in.

STEP #5 Prepare Cupcake batter   
Put your finely chopped chocolate and cocoa powder into a medium bowl. Pour your hot coffee over mixture; whisk until smooth. Put in the fridge to cool, for about 18-21 minutes (no more, or no less!!!) While the chocolate-coffee mixture is cooling, whisk your flour,sugar,salt, and baking soda together in bowl then, set to the side.
                                                                                                           
STEP #6 Whisk your oil, eggs, vanilla, and vinegar into the chocolate-coffee mixture until smooth. Add your dry mixture whisk until smooth.
STEP #6 Divide your batter evenly among the pan cups (about ⅔ full)  then, place a slightly rounded drop of ganache in the middle of the batter (I just dropped a little into the middle off of a spoon) STEP #7 Put in oven     which was preheated at 350 degrees, for 17-19 or  until set and firm to the touch. Once your cupcakes are finished baking set on cooling rack, or let cool in pan.

STEP #8 Make your frosting (you will need an electric hand mixer or an electric mixer of some sort) Put your butter, cocoa powder, confectioners sugar, and your vanilla in a medium bowl , mix together until smooth. If your icing seems dry add a little while mixer is on. (Makes 2 milk, like I did)
STEP #9 Melt 20 oz of chocolate chopped finely, put in microwave safe bowl then, put in microwave for 10-20 seconds. If you burn the chocolate then you will have to melt 20 oz more chocolate. Once you have your chocolate melted put in a piping bag tie the top of the bag. Get a pan and spray it with Pam or cooking spray then, cover it with parchment paper or wax paper. With your bag of melted chocolate pipe shapes of your choice. Let harden for 20-30 minutes sitting out. After the shapes harden put them in the fridge for 5-10 minutes.

STEP #10 Ice your cupcakes with the frosting you made and then, once you have iced them put your chocolate shapes on top and any other decorations you would like to put on them!

Soft Pretzels

HOW TO MAKE SOFT PRETZELS



step 1: get the following ingredients:


4  1/2 cups of unbleached bread flour
1 3/4 teaspoons of salt
1 ½ tablespoons of brown sugar
1 teaspoon instant yeast
1 ½ cup of lukewarm water
2 tablespoons unsalted melted butter
8 teaspoons baking soda for dipping
2 cups warm water for dipping
coarse sea salt for toppings


materials:
a mixer
a knife
cutting board
measuring cups
spoons
baking sheets
cooling racks



  1. combine flour, salt, and sugar in a mixing bowl  
  2. stir yeast into lukewarm water and let sit for 5 minutes
  3. add yeast mixture and oil to bowl with dry ingredients
  4. using mixer with dough hook combine until a ball of dough forms
  5. let rest for five minutes
  6. knead dough on floured cutting board until smooth
  7. form into a ball, place in an oiled bowl, cover in plastic wrap and refrigerate overnight
  8. preheat oven to 400 degrees
  9. stir baking soda into water
  10. remove dough from refrigerator and divide into twelve pieces
  11. roll each piece to 17 inches long and form into pretzel shape (see pictures below)
  12. dip each pretzel in baking soda solution and sprinkle with salt
  13. place each pretzel on a baking sheet and place in the oven for 8 minutes.
  14. rotate pan and bake for another 8 minutes
  15. remove from oven and cool on cooling rack




roll into 17 inch strips







next fold one end of the dough so it looks like the picture below




after that do the same thing with the other end




grab the two ends and twist






Next put the pretzel(which should still be made out of dough and not cooked)in the mixture of 8 teaspoons of baking soda and 2 cups of lukewarm water.let the pretzel sit in the mixture for more than 10 seconds, sprinkle with kosher salt then put them in the oven as per recipe above.
